Monk fruit has been grown in southern China for hundreds of years. It is a small, melon-like fruit that is often ground into a sugar-like sweetener. The fruit is crushed, releasing the juice. It is then mixed with hot water and filtered to reveal the fruit infusion. This infusion is then dried to create a powder known as monk fruit sugar.
